Welcome to Food for Thought! We are excited to share dining program news. Here you will find information about the lunch menu, special dining programs and events, taste tests, and featured fruits for the month ahead.

Introducing Our Flik Staff

This month, we are excited to introduce our Flik team. We have partnered with Flik here at St. Mark’s for the past three years.  Flik Dining Service is a part of the worldwide food service company, Compass Group. We encourage our students to learn the names and faces of our Flik team to enhance our community engagement. 

 

Chef Sergio is from Jalisco Mexico. He moved with his family to the California Bay area in 1986 and has been in the culinary area since 1996. During high school, Sergio worked at a catering company at Candlestick Park, home of the San Francisco Forty Niners and Giants. In 1998, he took a job with Compass Group and relocated to Houston in 2000. Chef Sergio joined our Flik team  at St Mark's in 2018.

 

Juanita is from Monterrey Mexico. Her passion for cooking began when she started helping her mom in the kitchen at a young age.  Juanita moved to Houston 25 years ago and has been cooking at different locations, including Compass group for Eurest Dining Services and now with Flik here at St Mark's since 2018.

 

Fidel is from El Salvador; he came to Houston in 1982 and started working in food service at pizza restaurants, and then with assisted living communities. Fidel joined Compass Group in 2010, and has worked for Flik at St. Mark’s since 2018.

 

Carolina is a native Houstonian. She attended nursing school and has worked on the Flik team since 2019. Carolina is a quick learner and takes care of plating meals for our students with allergies.

 

Nancy was born in Mexico and moved with her family to Houston at an early age. Nancy joined our Flik team at St. Mark’s in August of 2021, and when she isn’t at St. Mark’s, she is an assistant manager at Subway. Nancy is great with students and knows all about food allergens.

 

Rocky was born in Peru, and at a young age moved to the United States with her family to New York. Rocky has been in the culinary industry for more than 10 years. She works at PF Chang’s and with our Flik team at St. Mark’s.

Silvia is from El Salvador and has been in Houston since 1990, She has been working in food service since 2007, including 14 years with  Fort Bend ISD. Silvia has been with Flik for the last 4 years, and she joins us at St. Mark’s this year after spending the past several years at Duchesne Academy.

Our Flik team is thrilled to share their family recipes with our families. These meals are being served this month; if your student loved the meal, you can make them at home together!

Did You Know?

  • September 15 - October 15 is National Hispanic Heritage Month, in which we celebrate the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean and Central and South America. We thought it would be fun for our students to get to know our Flik team members by tasting some of their family recipes, which originate from their Hispanic and Latin cultures. 

  • At St. Mark’s, we start teaching Spanish from 2 years old and on!

Lunch menus are available via the Flik App or online. Selections for our Primary School students can be found in the Portal.

September’s Tasty Tuesdays: Tuesday, September 14, and Tuesday, September 28

Have you heard about #TastyTuesdays? Each month, Chef Sergio shares a tasting experience for our students in Preschool 3s through 8th grade. By giving kids a small taste of a new flavor in their classrooms, we hope to encourage our kids to expand their palette, try something new, and learn more about nutrition. This month, students will first be tasting Mexican Fruity Pico made of jicama, cucumber, oranges and honey.  The second Tasty Tuesday will feature Peruvian Quinoa and Mango made of quinoa, bell pepper, onion and  mango.
